From the very start, it was clear that running Gumbo to Geaux is more than just a business for owner Kevin Aycock; it’s a labor of love. He’s proud to have been serving the Bossier community for nearly two decades.

“I was working at a popular restaurant in Shreveport for about 18 years, and I learned a lot about seafood there,” Aycock said. “I’d always wanted to open my own place, and when I started looking, I realized there weren’t any gumbo or seafood spots in South Bossier. So I decided to change that.” 

 It’s been 18 years since Gumbo to Geaux has been serving the South Bossier Community.

“We did have two other stores, one in Shreveport and one down by the river. They shut down when COVID hit,” he said. 

Although two of the stores closed, the South Bossier location continues going strong. When it comes to the menu, Gumbo to Geaux keeps things simple and delicious.

 “We have two kinds of gumbo,” Aycock said. “A seafood gumbo, which has shrimp, crawfish, and crab, and a chicken and sausage gumbo. That way, people have an option depending on what they like.”

Of course, every gumbo lover wants to know the secret behind that rich, comforting flavor.

“It’s our roux, that’s the foundation, but also the seasoning and quality ingredients. We don’t use fillers or cut corners. We use top-of-the-line sausage, all-breast-meat chicken that cooks overnight, Gulf shrimp, crab, and Louisiana crawfish.”
