Peel, Eat, & Repeat: Top Crawfish Spots in Bossier to Check Out

We are halfway through crawfish season, but there is still time to get some of the best-tasting mudbugs in town. If you’re craving bold Louisiana flavor, Bossier City is boiling over with some of the best crawfish spots. From the laid-back vibes at BeauxJax Crafthouse, to the backyard boil feel of Cooyon’s Cajun Crawfish, and the crowd-favorite trays at Crawfish Tyme–Bossier, these local gems serve up crawfish done right!
Beaux Jax Crafthouse
BeauxJax Crafthouse is nestled in the vibrant East Bank District of Bossier City, a hub of activity and Louisiana charm. This dynamic restaurant is known for its mouthwatering menu, handcrafted cocktails, and, during crawfish season, its bold, flavor-packed Cajun crawfish. BeauxJax’s journey is a true testament to grit, passion, and perseverance. Co-owner Beau Hays reflects on their humble beginnings.
“We began as a food truck in 2015, then graduated to a small brick-and-mortar, and now a successful business in the East Bank District.”
While operating out of their first small location, the team looked for ways to increase revenue. An opportunity soon presented itself.
“Our landlord at the time was selling a crawfish trailer, and we decided to purchase it from her,” Hays said.
Although they had never sold crawfish in large quantities before, they were eager to take on the challenge.
“Our very first weekend, we decided to sell crawfish for $2.99 per pound, and the entire town showed up and we got waxed!” Hays said.“The second weekend, there was a historic flood. We had about 5,000 pounds of crawfish in our cooler, and flooding reached our restaurant, so nobody could get to us. But we cooked crawfish in ankle-deep water and ended up on the news because people drove up to us by boat!”
That unforgettable moment helped put BeauxJax on the map.
“After that, I believe we made a name for ourselves with crawfish, and we have continued to grow and grow,” Hays said. Despite the rocky start, BeauxJax stayed committed to serving high-quality crawfish.
“Crawfish is a seasonal treat that we add to our menu, and I am proud of the way we cook it,” said Hays. “We use a double boiler system, which helps us punch flavor into our crawfish.”
Located in a tourism-heavy area, BeauxJax caters to a wide range of palates.
“We have to find flavors that taste good to our people from Louisiana and not from Louisiana,” Hays said.“Understanding that the taste bud pallets are completely different, we developed our own blend of seasonings that focuses more on flavor than burning your lips.”
This unique approach has become part of their signature style, drawing crawfish lovers back year after year.
“We want our customers to have a more pleasant experience, especially if they are not from Louisiana,” Hays added. “I think it’s a North Louisiana thing to sprinkle seasoning on the crawfish shell, which causes your lips to burn.”
As BeauxJax refined their process and grew their fan base, a new opportunity arose: the chance to move to the East Bank District in Bossier City.
“Being in the East Bank District, you have somewhere you can eat your crawfish, have an adult drink, and listen to music, it’s a Louisiana vibe!” said Hays. “My vision for the future is connecting Chasing Aces to the casinos, the boardwalk, and the East Bank District.”
Today, BeauxJax is known not just for its food but for its atmosphere and community spirit.
“Not only is our crawfish good, but there is also a music experience that comes with it,” said Hays. “Every Thursday, Friday, and Saturday night, we do full-blown live concerts on our stage. It’s free to the public, and it’s a way to thank all the people who have supported us from a food truck until now.”
He sums it up perfectly: “Crawfish, music, a good time, and sitting across from your friends at a picnic table, it doesn’t get more Louisiana than that!”
