Enjoy Cozy Vibes at XO Coffee Co. in Bossier

Tucked right in the heart of Bossier City, XO Coffee Co. is the buzzworthy new spot that’s quickly becoming a local favorite. With its chic, cozy vibes and a menu that pairs bold espresso creations with creative seasonal twists, this isn’t just another coffee shop,  it’s an experience, a vibe. Whether you’re a caffeine connoisseur or simply looking for a cozy corner to unwind, XO Coffee Co. is the place where great coffee meets great company. Brewing the Perfect Location and Name 

Nestled right in the Lagniappe Plaza at 5450 Airline Drive is the latest local gem: XO Coffee Co. Owner Jennifer Hill-Dingler opened the shop with a simple mission: to create a cozy, welcoming space where the community can gather and connect over quality coffee.

“People love coffee, and it just brings people together. I saw a need for something like this in our area,” Hill-Dingler said. “This area in North Bossier is growing, and after doing my research on different locations, I decided this location would be perfect.”

But before landing on the name XO Coffee Co., she went through a few name changes.

“I changed the name about three times. At first, it was going to be Cafe7 because I have seven kids. Then I thought Joe Momma, like the joke ‘Yo Momma,’ was cute, but I worried the novelty might wear off.” 

After attending Coffee Fest in New Orleans and gathering feedback, inspiration struck. Once she started piecing together the shop’s pink accents and playful personality, the name XO Coffee Co. felt like the perfect fit.

“It’s catchy, it matches the vibe, and it matches my personality,” Hill-Dingler said. “At first, I worried it might feel too girly, but we have plenty of guys who come in to work on laptops, hang out, and bring their families. Everyone feels comfortable here.”

Serving Up Bites and Brews

While XO Coffee Co. is first and foremost a coffee shop, its menu offers so much more than just coffee. Hill-Dingler believes in creating a little something for everyone.

“We have signature drinks, lattes, regular coffee, chai tea, Lotus and Alani energy drinks, lemonades, and a variety of food options,” she said.

One of the highlights right now is their seasonal Taste of Spring Lavender menu, featuring drinks like the Candied Lavender Latte, Honey Lavender Macchiato, Lavender Lotus Energy, and Lavender Lemonade.

“When I create menus, I think about colors. People love the aesthetics for social media, but most importantly, it has to taste good,” Hill-Dingler said.

In addition to the drinks, XO Coffee Co. has partnered with fellow local favorite Bagel Boss Lady to bring in all-day breakfast bites like breakfast burritos, bagels, and egg and cheese bites.

“I offer several sugar-free options too, and people get excited about that because most places only have sugar-free vanilla or caramel,” she said.

She’s also looking to expand gluten-free options.

We featured a gluten-free King Cake from another local business, Prep Cakes, during the season, and it was a huge hit. People are always asking for gluten-free, and I want them to be able to grab something to-go without feeling limited.”

Where Coffee Meets Community

For Hill-Dingler, it’s about more than great coffee, it’s about creating a space that feels like a community.

“I want this to be a place where people can hang out, feel welcome, and just enjoy being here,” she said.

As a mom herself, Hill-Dingler understands the importance of having a family-friendly spot.

“I never want a mom to feel awkward coming in with her kids, or in her pajamas or leggings. This is a place that’s meant to brighten your day and put a smile on your face.”

Community support has been at the heart of XO Coffee Co. from day one. From partnering with Bagel Boss Lady, Prep Cakes, and Small Cakes to collaborating with other small businesses, Hill-Dingler makes it a point to feature what she genuinely loves. 

“Anything I advertise or serve here is something I enjoy myself,” she said.

And there’s even more to come, XO Coffee Co. is already planning special events to bring people together.

Up next? A fun Mother’s Day Cookie Decorating Event in collaboration with Sugar Blessed, happening May 9 from 5:30 to 7 p.m. The ticketed event includes a cookie decorating kit, complimentary coffee, and fresh croissants perfect for moms, friends, or anyone who loves a creative night out.

Juggling Coffee, Community, and Family

Starting a new business is always a challenge, and for Hill-Dingler, it’s been a balancing act between growing her business and making time for family.

“The biggest challenge has been balancing my business and my family. Not cooking dinner every night or managing homework like I used to, it’s a shift for all of us. But we’re learning and adjusting, and it’s getting better,” she said.

Despite the challenges, Hill-Dingler is grateful for the support and excited for what’s ahead.
